Fruit and meat casserole type dish

Ingredients

  • 2 slices bread
  • water
  • 2 large white onions
  • 2 tbsp oil
  • 1 tsp garlic paste (or 3 crushed cloves)
  • 800-1.2kg mince beef
  • 2 tbsp madras curry paste
  • 2 tsp mixed herbs
  • 4 cloves
  • 2 tbsp mango chutney
  • 3 tbsp sultanas
  • 4-5 bay leaves
  • 300ml milk
  • 2 large eggs

Preparation

  1. Heat oven to around 170C
  2. put the 2 slices of bread in a dish of water to soak
  3. fry the onions in the oil for approx 10 mins until soft
  4. Add garlic and mince and break the mince up well
  5. Add the curry paste, churney, herbs, spices, sultanas and salt and pepper
  6. Stir in well, reduce temperature, simmer for 10 mins
  7. drain the water from the bread, and beat the mushy bread into the mixture
  8. Add the bay leaves to the mixture
  9. Pour the mixture into a large roasting dish, at least 5cm deep, press down and smooth out carefully
  10. Beat the 2 eggs, and mix with the milk and salt and pepper
  11. pour the egg-milk mix carefully over the top of the mince layer, it should just cover the surface
  12. Bake for approx 40 minutes until the surface is beginning to brown
