Sweet & smoky BBQ recipe, which works well as finger-food

Ingredients

  • 2kg pork belly ribs
  • 2tbsp bbq sauce
  • 2tbsp ketchup
  • 2tbsp hendersons relish
  • ½ bottle red wine
  • 3-4tsp honey
  • 2tsp fresh rosemary
  • 2tsp oregano
  • flour
  • salt
  • ground black pepper

Equipment

  • Large bowl
  • Clingfilm or lid for bowl
  • Fridge space

Preparation

  1. Mix all ingredients except wine thoroughly in large bowl.
  2. Place the ribs in the sauce and mix around until well covered.
  3. Pour in wine to cover the mixture.
  4. Fridge for at least 3 hours (or overnight).
  5. Cook on BBQ or grill for 20-25mins turning frequently.
